The machine was conceived, designed and built with the aim of being used for artisanal productions and public demonstrations of hand spinning and burrata production.

The curd is introduced already minced into the spinning vat, where the cheesemaker will stretch it using the special polyethylene "Stecca", the dairy ladle and hot water.

When the curd has been transformed into spasta filata, the expert hands of the cheesemaker will transform it into mozzarella, nodini, trecce, scamorza, "Zizzona", etc... The mozzarella obtained will be introduced into the firming tank located in the center of the machine.
To produce the burrata it is necessary to prepare the stracciatella and pour it into the cone of the dosing machine, insert the still hot mozzarella into the dosing nozzle and press the stracciatella dispensing button.
