The variable speed motorized roller, rotating on its axis, transforms the dough into portions of mozzarella or similar products; after a rotation of approximately 200° the mozzarella will be expelled from the machine.

The structure of the machine is made of Aisi 304 stainless steel; the stainless steel parts in contact with the product are Teflon coated to facilitate the movement of the mixture and cleaning operations; other details in contact with the product are made of plastic materials suitable for contact with food.
The extrusion chamber is equipped with a cavity with a digital thermoregulation system to keep the stretched curd warm during moulding.
